Fall Salad

Preparation:
1. Cube sweet potatoes into bite size pieces. Roast for 30 minutes at 425 degrees. 2. Prepare kale by removing stems and massaging in olive oil or lemon juice with a pinch of salt. 3. Prepare spinach by removing stems. 4. Slice apple into small bite size cubes. 5. Cook a small serving of brown rice. 6. In a bowl, combine kale, spinach, sweet potatoes, apples, and rice. Top with almonds, dried cranberries, and shaved parmesan. 7. Dress with your favorite dressing!
